Pine Nut Queso Fresco
Tuesday, April 25th, 2006(Makes 2 cups)
2 cups raw pine nuts, soaked in water for at least one hour or more*
1 T fresh oregano, minced (optional)
1 T fresh cilantro, minced (optional)
2 T lemon juice
2 T nutritional yeast
1 t sea salt
4-6 T water*
• In a food processor process pine nuts, lemon juice, yeast and salt.
• Gradually add water and pulse til fluffy. *(The longer you have soaked the pine nuts the more water they will absorb, so the less water you will need to add).
